Black Bean and Quinoa Salad

INGREDIENTS:
3 cups cooked black beans
1 ½ cups red Quinoa, rinsed 
1 red bell pepper
1 green bell pepper
2 Roma tomatoes, diced
1 medium red onion, minced
½ bunch fresh cilantro
1 jalapeno pepper (optional)
1 ripe avocado (optional)
Juice of 2 limes
1/3 cup olive oil
Salt & pepper

DIRECTIONS:

  1. Prepare ingredients by dicing the peppers, tomatoes and onion
  2. In a bowl, mix all ingredients together.
  3. Add lime juice, salt, avocado and jalapeno as desired.
  4. Cover and refrigerate for 30 minutes.
  5. Serve and enjoy!
  6. You can eat this salad with bell pepper halves as scoops if desired!
