Gluten Free Soft Pretzel

1 TBSP Dry-Active Yeast

3.5 TBSP Palm Sugar

2.7 Cups Warm Water

5 TBSP Psyllium Husk

2.3 Cups Tapioca Flour

1.75 Cups Millet Flour

1.5 Cups Oat Flour

2 TBSP Xanthan Gum

2 TSP Himalayan Salt

5 TBSP Baking Soda

5 Cups Water

1 Egg (egg wash)


Preheat oven to 450F

Mix 1.3 cups water with 1tbsp palm sugar and dry yeast to activate.Mix psyllium and remaining water to form a “gel”

Mix tapioca, millet & oat flour with xanthin gum and salt, adding the psyllium gel and yeast mixture until a dough is formed.

Divide dough into 12 equal pieces and roll each into a tube 16” in length. Twist into a pretzel shape.

Prepare baking soda bath (5 cups water, 5TBSP baking soda that is just about to boil). Place pretzels in this for 30 seconds.

Remove from baking soda wash, place on baking pan. Egg wash and toss with salt then bake for 13-15 min until golden brown.
