Grass Fed Roast & Broccolini

  • 2 pounds boneless grass-fed organic beef roast
  • 1/3 cup chopped fresh rosemary
  • 10-12 cloves of garlic, crushed
  • 2 Tbsp avocado oil
  • 1 large bunch of broccolini
  • Sea Salt / Pepper


Preheat oven to 350 degrees. Tie the roast and season with salt and pepper.   In a skilled on medium-high heat, heat 2 Tbsp of avocado oil. Once hot, sear meat in skillet, browning all sides of the meat. While searing, mix together the rosemary and garlic to create a rub for the meat.

Remove the meat from the skillet, allowing it to cool slightly and rub with the herb and garlic mixture over the meat then place in a roast dish.

Roast for 60-90 min using a meat Thermometer to ensure internal temperature of 135 degrees before removing. Let meat rest for 10 minutes before slicing to serve.

About 10 min before the roast is complete, in large skillet on medium-heat melt 2 tbsp of butter or coconut oil, adding the broccoli to saute for 5-10 minutes.

Plate each and enjoy.
