Ingredients
- 6 pasture-raised eggs
- 1 ripe avocado
- 1–2 tsp fresh lime juice
- 1 clove garlic, finely minced
- 1 tbsp red onion, finely chopped (optional)
- 1 tbsp cilantro, finely chopped
- 1 tbsp extra virgin olive oil or avocado oil
- ¼ tsp sea salt (or to taste)
- ⅛ tsp black pepper
- Dash of smoked paprika (optional, for garnish)
- Jalapeño slices or chopped tomato (optional, for topping)
Instructions:
- Boil the eggs: Place eggs in a pot, cover with cold water, bring to a boil. Once boiling, cover, turn off heat, and let sit for 10 minutes. Transfer to an ice bath, then peel.
- Halve the eggs: Cut each egg in half lengthwise and scoop yolks into a mixing bowl.
- Make the guacamole filling: Mash yolks and avocado together until creamy. Add lime juice, garlic, onion (if using), cilantro, olive oil, salt, and pepper. Mix until smooth and well combined. Taste and adjust seasoning.
- Fill the eggs: Spoon or pipe the guacamole mixture into the egg white halves.
- Garnish (optional): Top with a sprinkle of smoked paprika, a sliver of jalapeño, or chopped tomato for color and spice.
