Deviled Eggs A La Guacamole

Ingredients

  • 6 pasture-raised eggs
  • 1 ripe avocado
  • 1–2 tsp fresh lime juice
  • 1 clove garlic, finely minced
  • 1 tbsp red onion, finely chopped (optional)
  • 1 tbsp cilantro, finely chopped
  • 1 tbsp extra virgin olive oil or avocado oil
  • ¼ tsp sea salt (or to taste)
  • ⅛ tsp black pepper
  • Dash of smoked paprika (optional, for garnish)
  • Jalapeño slices or chopped tomato (optional, for topping)

Instructions:

  1. Boil the eggs: Place eggs in a pot, cover with cold water, bring to a boil. Once boiling, cover, turn off heat, and let sit for 10 minutes. Transfer to an ice bath, then peel.
  2. Halve the eggs: Cut each egg in half lengthwise and scoop yolks into a mixing bowl.
  3. Make the guacamole filling: Mash yolks and avocado together until creamy. Add lime juice, garlic, onion (if using), cilantro, olive oil, salt, and pepper. Mix until smooth and well combined. Taste and adjust seasoning.
  4. Fill the eggs: Spoon or pipe the guacamole mixture into the egg white halves.
  5. Garnish (optional): Top with a sprinkle of smoked paprika, a sliver of jalapeño, or chopped tomato for color and spice.
