Southwest Salmon + Pickled Salsa

INGREDIENTS:

Salmon

1 Salmon Fillet

1 TBSP Avocado Oil

1 TSP Cumin

1 TSP Chili Pepper

Himalayan Salt/Pepper To Taste

Salsa

1 Medium Avocado

1 Medium Tomato

1 Medium Jalapeno Pepper

1 Medium Onion

1 Medium Lime

2 TBSP Cilantro

DIRECTIONS:

Prepare the salsa the night before by chopping avocado, tomato, pepper and onion finely. Place into a container, add juiced lime then refrigerate overnight in the juice.

When ready to prepare salmon – In a small bowl combine oil, cumin, chili pepper and salt/pepper to make seasoning paste.

Spread evenly over the salmon fillet. Cook the salmon on a medium heat skillet pan for 7 min on each side.

Remove salsa from refrigerator, place in center of plate, then add cooked salmon. Garnish with fresh cilantro and enjoy!
