Almond Crisps

Cook Time: 10 mins

Yield: 3 dozen crackers

 

Ingredients:

  • 2 cups blanched almond flour
  • 2 ½ Tbsp nutritional yeast
  • 4 tsp coconut oil, melted
  • 4 tsp cold water
  • 4 tsp free-range egg whites
  • ½ tsp baking soda
  • ¼ tsp Himalayan sea salt

 

Directions:

  1. Preheat oven to 350°
  2. Place all ingredients in a bowl of a mixer. Mix for about 30 seconds until a loose dough forms.
  3. Form dough into a ball and roll it out between 2 sheets of parchment paper to about ¼” thickness.
  4. Remove top sheet of parchment paper. Use a pizza cutter to cut the dough into 1” squares. Save the leftovers to reroll for more crackers.
  5. Move the parchment paper to a baking sheet and separate the crackers. Space evenly. Use a small, round object to indent a circle in the centers.
  6. Bake for 10 mins, rotate the pan once, until golden around edges. Let cool completely before serving.
