Chicken Fajitas

There’s nothing quite like homemade Mexican cuisine. Spiced just right, it’s among the world’s most delightful culinary traditions. And what better an example than chicken fajitas. Ingredients:

  • 2 pounds skinless, boneless chicken breast
  • 2 TBSP coconut oil
  • 1 organic green and one organic red bell pepper, sliced
  • 1 white onion
  • 2 cloves of garlic, finely chopped
  • 1 tsp sea salt
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1 15 oz. can organic black beans

Directions:

Begin by heating the beans in a pot on low-medium, stirring occasionally.

On a medium setting, heat the coconut oil and a splash of water in a large skillet, add sliced chicken breast. Add about half of the garlic and half of the sea salt and cook until chicken is fully cooked through. Remove the chicken and let cool.

In the same skillet, add enough water to cover the bottom. Add bell peppers and onion. Add the remaining garlic and sea salt. Cook for 5-10 minutes. Add chicken back into the mix, along with the cumin and chili powder.

Serve either over a bed of black beans or in a wrap.
