Keto Lemon Pudding
A sweet and tangy favorite for the family – great for any gathering.
- 1 Can unsweetened full-fat coconut milk
- 3 T Organic grass-fed gelatin powder
- 2 Whole lemons, juiced
- 1 Pinch of sea salt
- 2 T Xylitol or Monk Fruit
Put all the ingredients (except gelatin) in to a high speed blender and mix.
Then, add the gelatin slowly to the mix at a lower speed.
Refrigerate for at least 3 hours to set before serving.
Garnish with the zest of the lemon for presentation.
Serve with our coconut cookies for an extra tasty treat!
