Water Kefir (Kevita)
This water-based, carbonated kefir drink is a great substitute for soda, and so much healthier. It’s a brand name for the this drink, but has sort of taken on a “Kleenex” or “Chap-stick” designation for the product in general. Like all fermented foods, it offers a wide range of health benefits, mostly assisting with digestion, immunity and a healthy gut biome. Here’s a quick and easy recipe.
- Water kefir grains (rehydrated)
- Filtered water
- 1 cup organic cane sugar per gallon of water used*
- Glass jars (either four 1-quart jars, 2 half-gallon jars or 1 gallon jar)
- Wooden spoon for stirring
- 6 12oz sealable glass bottles
- Hand towels
- Heavy-duty rubber bands
- Dissolve an equivalent amount of sugar in a small amount of water in each jar (1/4 per quart jar, 1/2 cup per half-gallon jar, 1 cup for gallon jar).
- Fill the jar four-fifths of the way up with water.
- Add an equivalent amount of kefir grains into each jar (1/4 per quart jar, 1/2 cup per half-gallon jar, 1 cup for gallon jar).
- Cover the jar(s) with the hand towels and attach with rubber bands
- Let the kevita sit at room temperature, out of direct sunlight for 24-48 hours. Taste after 24 hours. It loses sweetness and gains carbonation the longer it sits. That part is up to you!
*Fermentation turns sugar into lactic acid, CO2 and alcohol. Don’t worry about the sugar content in these recipes!
