Lemon Pepper Green Beans

Green beans are jam packed with fiber, a great source of plant protein, full of vitamins, like Vitamin A, C, K, B6 and minerals like calcium, iron, potassium and copper. Plus, they are just good. Here’s a recipe to make them interesting and introduce a new flavor to your plate. A great side with fish.

Ingredients:

  • 3 lbs fresh organic green beans
  • 2 TBSP coconut oil or butter
  • 2 cloves garlic, minced
  • 1/4 cup lemon juice
  • 2 tsp grated lemon rind – or- 2-3 drops lemon oil
  • Pepper
  • 1/4 tsp sea salt

Directions:

In a large heavy skillet over high heat, stir-fry green beans and garlic in coconut oil or butter until crisp on the outside but tender in terms of how they bend.

Reduce heat to medium, then add lemon juice, lemon rind, pepper and salt.

Cover and let steam for 2-3 minutes, stirring occasionally. You can go as long as 10 minutes if you want them softer.
