Butternut Squash Soup

Ingredients

  • 1 Medium Butternut Squash
  • 1 TBSP Coconut Oil
  • 1 Small Onion
  • 2 Garlic Cloves
  • 1 TSP Turmeric
  • 1/2 TSP Cinnamon
  • 4 CUPS Bone Broth
  • 1 CUP Coconut milk
  • Sea Salt and pepper to taste

Instructions:

  1. Preheat oven to 400 degrees Fahrenheit and roast butternut squash with spices.
  2. Mince garlic, cut onion.
  3. Sauté onion and garlic in a pot until soft.
  4. Simmer roasted squash with broth for 10 min.
  5. Blend until smooth and stir in coconut milk.
  6. Serve with fresh herbs.
