Turkey Bacon Wrapped Liver Bites

Ingredients

  • 1 lb turkey liver (or chicken liver, if preferred)
  • 1 pack turkey bacon (preferably nitrate-free)
  • 1 tsp sea salt 1/2 tsp black pepper (optional, as tolerated on the carnivore diet)
  • 1/2 tsp garlic powder (optional, as tolerated)
  • 1/4 cup grass-fed butter or tallow (for cooking)

Instructions:

  1. Rinse the turkey liver under cold water and pat dry with paper towels.
  2. Cut the liver into bite-sized pieces, roughly 1–1.5 inches in size.
  3. Lightly season the liver pieces with sea salt, black pepper, and garlic powder (if using).
  4. Cut the turkey bacon strips in half to make wrapping easier.
  5. Wrap each piece of liver with a half strip of bacon, securing it with a toothpick.
  6. Heat a skillet over medium heat and add the grass-fed butter or tallow.
  7. Place the bacon-wrapped liver bites in the skillet, seam side down to secure the bacon.
  8. Cook for 3–4 minutes on each side, turning frequently to ensure the bacon becomes crispy and the liver cooks through. Total cooking time should be about 10–12 minutes.
  9. Transfer the cooked liver bites to a plate lined with paper towels to remove excess grease.
  10. Serve warm as an appetizer or a nutrient-dense snack.
