Ingredients:
- 6 large PaleoFarms eggs
- 1/2 pound (8 oz) grass-finished skirt steak
- 2 tbsp tallow, ghee, or duck fat
- Pinch of Himalayan salt
- Dash of black pepper
Instructions:
- Cook the Beef:
- Heat 1 tablespoon of your chosen fat in a large skillet over medium heat.
- Add the skirt steak and cook until medium.
- Once fully cooked, remove the beef from the pan and set aside.
- Scramble the Eggs:
- Add the remaining 1 tablespoon of fat to the skillet, still on medium heat.
- Pour in the whisked eggs, stirring gently as they start to set.
- Combine Beef and Eggs:
- Once the eggs are about halfway cooked (still slightly runny), fold over the cooked steak.
- Garnish with Salt/Pepper or other toppings (cilantro, parsley, salt/pepper, kimchi etc)
