Steak & Eggs

Ingredients:

  1. 6 large PaleoFarms eggs
  2. 1/2 pound (8 oz) grass-finished skirt steak
  3. 2 tbsp tallow, ghee, or duck fat
  4. Pinch of Himalayan salt
  5. Dash of black pepper

Instructions:

  1. Cook the Beef:
    • Heat 1 tablespoon of your chosen fat in a large skillet over medium heat.
    • Add the skirt steak and cook until medium.
    • Once fully cooked, remove the beef from the pan and set aside.
  2. Scramble the Eggs:
    • Add the remaining 1 tablespoon of fat to the skillet, still on medium heat.
    • Pour in the whisked eggs, stirring gently as they start to set.
  3. Combine Beef and Eggs:
    • Once the eggs are about halfway cooked (still slightly runny), fold over the cooked steak.
  4. Garnish with Salt/Pepper or other toppings (cilantro, parsley, salt/pepper, kimchi etc)
