This is a fantastic side dish or even just a snack. Sweet potatoes–despite being sweet–don’t spike your blood sugar nearly as much as a regular potato, and they’ve got more potassium than a banana. Always a great choice.
Ingredients
- 2 lb. sweet potatoes, cut into wedges
- 2 Tbsp olive oil or melted coconut oil
- 1 Tbsp paprika
- 1 tsp cayenne pepper
- 3 tsp onion powder
- 2 tsp sea salt
- 1 tsp freshly ground pepper
Directions
- Preheat oven to 400 F
- Place oil and all dry ingredients in a bowl and combine
- Add in wedges and mix until coated thoroughly
- Place on baking sheet and bake for 30 minutes or until crispy
