This hearty, healthy recipe will feed a small army–or maybe just your family. It’s savory and delicious and very simple to make. Don’t be fooled by how delicious it is; this one will be in your quick-dinner shortlist in no time.
Ingredients:
- 1 free-range large egg
- 1 TBSP, plus 1.4 tsp of tomato paste
- 1 TBSP dijon mustard
- 1 small clove garlic, minced
- 1 TBSP onion flakes
- 1/2 tsp sea salt
- 1/2 tsp dried dill
- 1/2 tsp ground allspice
- 1/2 tsp black pepper
- 1 1/2 lbs free-range ground turkey
- 2 TBSP grated Parmesan cheese
- 2/3 cup chopped walnuts (optional)
Directions:
- Preheat oven to 375 F. Cover the bottom of a baking dish with coconut oil cooking spray
- In a large bowl, lightly beat the egg, tomato paste, mustard, garlic, salt, dill, allspice and pepper
- Stir in the turkey, Parmesan, onion flakes and walnuts until well mixed
- Make the mixture into a loaf and put it in the baking dish
- Bake for 45-50 minutes or until internal temperature reaches 165 F.
