Ingredients
- 3 Large @PaleoFarms Eggs
- 1/4 CUP diced bell peppers (any color you prefer)
- 1/4 CUP diced onion
- 1/4 CUP diced tomatoes
- 1/4 CUP diced mushrooms
- 1 handful fresh spinach leaves
- Salt and pepper to taste
- 1 TBSP avocado oil or coconut oil for cooking
Instructions:
- In a small bowl, beat the eggs until well combined. Season with salt and pepper to taste.
- Heat the avocado oil or coconut oil in a non-stick skillet over medium heat.
- Add the diced bell peppers, onion, tomatoes, and mushrooms to the skillet. Sauté for 2-3 minutes
- Add the fresh spinach, continue to cook for another 1-2 minutes.
- Pour the beaten eggs over the sautéed vegetables in the skillet, Cook for 2-3 minutes
- Fold the omelet in half and cook until the the omelet is golden brown.
