Ingredients
- 2 CUPS cooked, shredded organic chicken
- 1 organic ripe avocado
- 2 TBSP fresh lemon or lime juice
- 2 TBSP chopped organic cilantro (optional)
- 1-2 TBSP red onion, finely chopped
- Salt and pepper to taste
- Organic romaine or butter lettuce leaves for wrapping
Instructions:
- In a mixing bowl, mash the avocado with lemon or lime juice until creamy.
- Add the shredded chicken, red onion, and cilantro (if using), then mix everything together.
- Season with salt and pepper to taste.
- Spoon the chicken salad into large lettuce leaves, fold the edges, and roll them up like wraps.
- Serve immediately and enjoy!
