Avocado Chicken Salad Lettuce Wraps

Ingredients

  • 2 CUPS cooked, shredded organic chicken
  • 1 organic ripe avocado
  • 2 TBSP fresh lemon or lime juice
  • 2 TBSP chopped organic cilantro (optional)
  • 1-2 TBSP red onion, finely chopped
  • Salt and pepper to taste
  • Organic romaine or butter lettuce leaves for wrapping

Instructions:

  1. In a mixing bowl, mash the avocado with lemon or lime juice until creamy.
  2. Add the shredded chicken, red onion, and cilantro (if using), then mix everything together.
  3. Season with salt and pepper to taste.
  4. Spoon the chicken salad into large lettuce leaves, fold the edges, and roll them up like wraps.
  5. Serve immediately and enjoy!
