Egg Roll In A Bowl

Ingredients:

  • 1 lb ground turkey or chicken (ensure it’s free from additives)
  • 1 tablespoon coconut oil or avocado oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon grated ginger
  • 1/2 head cabbage, thinly sliced
  • 1 large carrot, julienned or grated
  • 1 bell pepper, thinly sliced
  • 3 tablespoons coconut aminos (a soy-free alternative to soy sauce)
  • 1 tablespoon rice vinegar (ensure it’s free from added sugars)
  • 1 teaspoon sesame oil
  • Salt and pepper to taste
  • Optional toppings: sliced green onions, sesame seeds

Instructions:

  • Heat the coconut or avocado oil in a large skillet over medium heat.
  • Add the diced onion, minced garlic, and grated ginger. Sauté until fragrant, about 2-3 minutes.
  • Add the ground turkey or chicken to the skillet. Cook until browned and cooked through, breaking it apart with a spoon as it cooks.
  • Once the meat is cooked, add the sliced cabbage, julienned carrot, and sliced bell pepper to the skillet. Stir well to combine.
  • In a small bowl, whisk together the coconut aminos, rice vinegar, and sesame oil. Pour this sauce over the meat and vegetable mixture in the skillet.
  • Continue to cook, stirring occasionally, until the vegetables are tender yet still slightly crisp, about 5-7 minutes.
  • Season with salt and pepper to taste.
  • Once everything is cooked through and well combined, remove the skillet from the heat.
  • Serve your delicious egg roll in a bowl hot, garnished with sliced green onions and sesame seeds if desired.
