Holy guacamole! Start our morning with the right fat on your side! This breakfast is known to lower cholesterol and triglycerides. Not to mention its tasty too!
Ingredients
- 4 Avocados
- Juice of 1 lemon
- handful of organic romaine lettuce leaves, thinly sliced as possible
- 1 diced yellow pepper
- 1 diced spring onion
- 1 handful pumpkin seeds, toasted
Directions
- Put 2 avocados into a blender or food processor with lemon juice
- Blend until smooth and creamy
- Place mixture in a large bowl
- Take 2 other avocados, take out the pit and dice into pieces
- Add the avocado slices, lettuce, yellow pepper, onion, and seeds to bowl
- Mix all ingredients well
- Serve on coconut almond bread or your favorite grass fed beef patty
