- 3 pounds boneless grassfed organic beef roast
- 1/4 cup chopped fresh rosemary
- 1/4 cup chopped garlic
- 2 Tbsp avocado oil
Preheat oven to 350 degrees. Tie the roast and season with salt and pepper. On medium high heat, heat 2 Tbsp of avocado oil. Once hot, sear meat in skillet, browning all sides of the meat. Remove the meat from the skillet and rub with the herb and garlic mixture over the meat. and place in a roast dish. Or if using a cast iron skillet just transfer the skillet to the oven. In the preheated oven for 1-1.5 hours. Thermometer reading should read 135 degrees. Let meat rest for 10 minutes. Serve immediately.
