Watching your carbs but just can’t live without your mac & cheese? This is just as delicious, carb-free and gives you the added nutrients of some delicious cauliflower.
Ingredients:
- 1 head cauliflower cut into florets
- 2 tbsp butter
- 3 tbsp coconut flour
- 2 tbsp coconut milk
- 1 clove garlic, minced
- 2 cups grated raw cheddar cheese
- 1/2 cup nutritional yeast
- 2 egg yolks
Directions:
Preheat oven to 350 degrees.
Boil cauliflower in water for 5-7 minutes. Drain and set aside.
Melt butter, whisk in coconut milk and garlic.
Remove from heat and add cheese, yeast, egg yolks and cauliflower.
Pour contents into baking dish and bake for 30 minutes or until hot and bubbly.
