Coconut Cookies – Sugar-free, Grain-Free

Sometimes you just need a cookie. Don’t reach for the Oreos or Chips Ahoy. Make these delicious coconut cookies that, while being totally sugar and grain-free, also happen to be full of the healthy fats that come with a giant dose of coconut!

Ingredients:

  • 2 Tbsp grass fed butter
  • 2 1/2 cups unsweetened shredded coconut
  • 2 large eggs
  • 3/4 cup xylitol

Directions:

Preheat oven to 350 F.

Melt butter in a medium saucepan. Remove from heat and add in the shredded coconut, stirring gently.

In a separate bowl, beat the eggs with an electric mixer on medium speed until blended.

Beat in the xylitol and increase the speed to beat until light and fluffy.

Stir in the coconut and butter mixture until thoroughly mixed.

Line two baking sheets with wax or parchment paper.

Drop rounded teaspoon of the batter onto the prepared baking sheets.

Bake for 8-10 minutes until tips of cookies are a pale golden color.

Remove baking sheet from oven and slide parchment paper off baking sheet with cookies on it, and let cool completely.
