Coconutmeal (Oatmeal Substitute)

  • 2 tbsp ground flaxseed (flax meal)
  • 1 tbsp ground almonds (almond meal)
  • 1 tbsp finely ground dried coconut flakes 1/2 tsp cinnamon
  • 1/2 tsp vanilla extract
  • 1/3 cup coconut milk
  • 1/2 cup nut milk (almond, macadamia etc)
  • Toppings:
    • Fresh Berries
    • Chia Seeds
    • Pumpkin Seeds

 Ingredients are based on a single serving size. Adjust according to desired number of servings.


  1. In a medium bowl mix well with the flax and almond meal, coconut flakes and cinnamon.
  2. Pour the nut milk, coconut milk, and vanilla extract into a saucepan and warm over medium heat.
  3. Stir in the dry ingredients and simmer on low/ medium until the mixture thickens.
  4. Transfer to a bowl, top with additional toppings if desired and enjoy!
