Double Onion Frittata

For the onion lovers. You get a full dose of this healthy root vegetable in a protein-packed, delicious quiche appropriate for any meal of the day. And it’s super easy to make.


  • 3 cups organic white onions, thinly sliced
  • 3 TBSP grass fed butter
  • 1 cup green onions, thinly sliced
  • 3 organic free-range eggs
  • 1 cup coconut cream
  • 1/2 cup raw Parmesan cheese
  • 1/4 tsp hot pepper sauce
  • Oregano, parsley and basil to taste
  • Sea salt and pepper to taste


Preheat oven to 350F.

In a medium skillet, cook yellow onions in butter, stirring occasionally for 10 minutes.

Add green onions and cook 5 more minutes. Remove from heat and all to cool.

Whisk eggs in a large bowl until frothy.

Whisk in cream, cheese, pepper sauce and a sprinkle of oregano, parsley and basil.

Stir in cooled onion mixture.

Pour egg and onion mixture into pie plate sprayed with grapeseed oil spray.

Bake for approximately 30-40 minutes until knife inserted in center comes out clean.

Cool 10 minutes before serving.
