INGREDIENTS:
Crust:
- 1 CUP almond flour
- 1/4 TSP sea salt
- 2 TBSP xylitol
- 1 TBSP coconut oil
- 2 TBSP butter
- 1 TBSP vanilla
Filling:
- 1/4 CUP almond flour
- 1/4 CUP xylitol
- 2 TSP stevia
- 4 eggs
- 1/2 C fresh lemon juice
INSTRUCTIONS:
Preheat oven to 350F, Line 8-in square baking dish with parchment paper.
Crust:
Combine almond flour, xylitol, and salt in a large bowl. In a separate bowl combine coconut oil, butter and vanilla then transfer into the dry ingredients bowl and mix until dough forms. Press evenly on the bottom of the lined baking dish. Bake 15-20 min until lightly brown.
Filling:
In a blender/food processor mix almond flour, xylitol, stevia, eggs and lemon juice. Pour onto the cooked crust and place back into the oven for 15-20 min. Remove and let cool for 30 min then refrigerate for 2 hours then cut into bars and serve.
