Keto Lemon Pudding

A sweet and tangy favorite for the family – great for any gathering.

Ingredients:

  • 1 Can unsweetened full-fat coconut milk
  • 3 T Organic grass-fed gelatin powder
  • 2 Whole lemons, juiced
  • 1 Pinch of sea salt
  • 2 T Xylitol or Monk Fruit

 

Directions:

Put all the ingredients (except gelatin) in to a high speed blender and mix.

Then, add the gelatin slowly to the mix at a lower speed.

Refrigerate for at least 3 hours to set before serving.

Garnish with the zest of the lemon for presentation.

 

Suggestion:

Serve with our coconut cookies for an extra tasty treat!
