Ingredients
- 1 lb turkey liver (or chicken liver, if preferred)
- 1 pack turkey bacon (preferably nitrate-free)
- 1 tsp sea salt 1/2 tsp black pepper (optional, as tolerated on the carnivore diet)
- 1/2 tsp garlic powder (optional, as tolerated)
- 1/4 cup grass-fed butter or tallow (for cooking)
Instructions:
- Rinse the turkey liver under cold water and pat dry with paper towels.
- Cut the liver into bite-sized pieces, roughly 1–1.5 inches in size.
- Lightly season the liver pieces with sea salt, black pepper, and garlic powder (if using).
- Cut the turkey bacon strips in half to make wrapping easier.
- Wrap each piece of liver with a half strip of bacon, securing it with a toothpick.
- Heat a skillet over medium heat and add the grass-fed butter or tallow.
- Place the bacon-wrapped liver bites in the skillet, seam side down to secure the bacon.
- Cook for 3–4 minutes on each side, turning frequently to ensure the bacon becomes crispy and the liver cooks through. Total cooking time should be about 10–12 minutes.
- Transfer the cooked liver bites to a plate lined with paper towels to remove excess grease.
- Serve warm as an appetizer or a nutrient-dense snack.
