Ingredients:
- 2 ½ tsp chili paste
- 2 ½ tsp fish sauce
- 1 ½ tsp coconut aminos
- 4 Tbsp coconut oil
- 3 garlic cloves minced
- 12 ounced ground beef
- ¾ tsp crushed dried thai chili or crushed red pepper (optional)
- 1 bunch baby bok choy, cut lengthwise into quarters
- 4 large eggs
Directions:
Combine chili paste, fish sauce, aminos in a small bowl and mix. Heat killet under high heat. Add 2 Tbsp oil. Add garlic and cook for about 10 seconds. Add beef to pan. Cook for about 3-5 minutes or until browned. Stir in soy mixture. Cook 30 seconds. Remove from skillet and place on a plate.
Add 1 Tbsp coconut oil to skillet and crushed red pepper. Cook for a few seconds. Add bok choy and cook for 2-3 minutes or until tender. Place on plate with meat.
Heat 1 tbsp of coconut oil in skillet. Crack eggs into skillet and cook for 1-2 minutes covered. Serve on a plate with meat and bok choy.
