Southern Collard Greens

  • 1 Tbsp coconut oil
  • 2 bunches of collard greens roughly chopped
  • 1 package turkey bacon chopped
  • 1 Tbsp balsamic vinegar
  • 1 yellow onion diced
  • 2 cups chicken broth
  • salt and pepper to taste

Heat soup pot to medium heat.  Add coconut oil.  Add chopped bacon and cook until browned.  Add onions and sauté for 3-4 minutes. Add collard greens, vinegar and salt. Add chicken broth and cover. Cook until tender about 3—45 minutes checking on it regularly.  Add salt, pepper and vinegar as desired. Serve immediately.
