Super Veggie Omelette

Ingredients

  • 3 Large @PaleoFarms Eggs
  • 1/4 CUP diced bell peppers (any color you prefer)
  • 1/4 CUP diced onion
  • 1/4 CUP diced tomatoes
  • 1/4 CUP diced mushrooms
  • 1 handful fresh spinach leaves
  • Salt and pepper to taste
  • 1 TBSP avocado oil or coconut oil for cooking

Instructions:

  1. In a small bowl, beat the eggs until well combined. Season with salt and pepper to taste.
  2. Heat the avocado oil or coconut oil in a non-stick skillet over medium heat.
  3. Add the diced bell peppers, onion, tomatoes, and mushrooms to the skillet. Sauté for 2-3 minutes 
  4. Add the fresh spinach, continue to cook for another 1-2 minutes.
  5. Pour the beaten eggs over the sautéed vegetables in the skillet, Cook for 2-3 minutes
  6. Fold the omelet in half and cook until the the omelet is golden brown.
