Superfood Salad With Salmon & Creamy Garlic Dressing

Ingredients

  • 1LB Wild Caught Salmon
  • 1/2 cup full-fat plain coconut yogurt
  • 1/4 cup avocado mayonnaise
  • 2 TBSP lemon juice
  • 1 TBSP grated raw parmesan cheese
  • 1 TBSP finely chopped parsley
  • 1 TBSP fresh chives
  • 2 TSP coconut aminos
  • 1 medium clove of garlic
  • 8 cups chopped curly kale
  • 2 cups chopped broccoli, red cabbage, and carrots

Instructions:

  1. Preheat oven broiler and place rack on upper third level.
  2. Place salmon on baking sheet, skin side downing oven 8-12 minutes.
  3. Combine yogurt, mayonnaise, lemon juice parmesan, parsley, chives, garlic and pepper in small bowl with coconut aminos. 
  4. Combine kale, broccoli, cabbage, and carrots into a large bowl and miss with 3/4 cup of dressing.
  5. Combine with salmon and serve.
