Eggs Florentine

Ingredients:

• 1/2 White Onion (Minced)

• 1 Clove Garlic (Minced)

• 1 Lemon

• 2 Cups Fresh Spinach

• 6-8 Eggs

Instructions:

  • In a skillet saute onions and garlic in butter over medium heat.
  • Once onions have started to soften, add spinach and allow to wilt.
  • Squeeze lemon over spinach.
  • Scramble eggs and pour over mixture.
  • Cook till eggs are done then enjoy!
