Sweet potatoes are a fantastic source of potassium, vitamin A, vitamin B1 and B2 and Vitamin C. Plus, they don’t spike your blood sugar like normal potatoes–despite being sweeter! Try these mashed potatoes once and you’ll never go back to the old kind.
Ingredients:
- 6 medium sweet potatoes
- 1 can unsweetened coconut milk
- 1 tsp. cinnamon
- 1 tsp. ground cloves
- 1 tsp. sea salt
Directions:
Bake sweet potatoes in oven at 375° for 1 hour or until soft and cooked through.
Remove from oven and allow to cool. Remove and discard peels.
Place peeled potatoes, coconut milk, cinnamon, cloves and salt into a high-speed blender and mix until combined and smooth.
Pour into serving vessel and garnish with clove or cinnamon powder.
