Cheesecake can actually be a very healthy dessert if done properly! And this is how you do it properly, without crust or sugar. And it is… heavenly.
Ingredients:
- 32 oz of organic cream cheese
- 1 cup organic sour cream
- 4 free range eggs
- 1 TBSP stevia
- 3/4 cup xylitol
- 1 TBSP vanilla
- (Optional) 10 oz frozen raspberries
Directions:
Beat cream cheese until smooth. Mix in sour cream, eggs, stevia, xylitol, vanilla, and raspberries.
Butter the bottom of a 10-inch spring form pan. Pour in the mixture. Then place 10-inch pan into an oven-safe dish that is larger than 10 inches. Pour hot water into outer dish until it reaches halfway up the cheesecake.
Bake at 350 degrees for 45-60 minutes until center is nearly set.
Cool for 15 minutes. Scrape sides of pan with a knife and release spring.
Cool for another 30 minutes. Release spring and refrigerate 4 hours.
