Salmon Stuffed Avocados

INGREDIENTS:

• 1/2 CUP Avocado Oil Mayonnaise

• 1/2 CUP Celery (chopped)

• 2 TBSP Chopped Fresh Parsley

• 1 TSBP Lime Juice

• 1 TSP Dijon Mustard

• 1/8 TSP Himalayan Salt

• 1/8 TSP Black Pepper

• 10 OZ Salmon (cooked & flaked)

• 2 Avocados

• Chives (chopped for garnish)

DIRECTIONS:

• In a medium bowl combine mayonnaise, celery, parsley, lime juice, mustard, salt, and pepper, mixing well. The add salmon and mix well.
• Cut avocados lengthwise to remove pits. Remove some of the avocado to create a deep well and mix that avocado with the salmon mixture.
• Fill each avocado with 1/4 of the salmon mixture.
• Garnish with chives and chill before serving.
