Ingredients
- 1LB Wild Caught Salmon
- 1/2 cup full-fat plain coconut yogurt
- 1/4 cup avocado mayonnaise
- 2 TBSP lemon juice
- 1 TBSP grated raw parmesan cheese
- 1 TBSP finely chopped parsley
- 1 TBSP fresh chives
- 2 TSP coconut aminos
- 1 medium clove of garlic
- 8 cups chopped curly kale
- 2 cups chopped broccoli, red cabbage, and carrots
Instructions:
- Preheat oven broiler and place rack on upper third level.
- Place salmon on baking sheet, skin side downing oven 8-12 minutes.
- Combine yogurt, mayonnaise, lemon juice parmesan, parsley, chives, garlic and pepper in small bowl with coconut aminos.
- Combine kale, broccoli, cabbage, and carrots into a large bowl and miss with 3/4 cup of dressing.
- Combine with salmon and serve.
