Turkey Loaf

This hearty, healthy recipe will feed a small army–or maybe just your family. It’s savory and delicious and very simple to make. Don’t be fooled by how delicious it is; this one will be in your quick-dinner shortlist in no time.

Ingredients:

  • 1 free-range large egg
  • 1 TBSP, plus 1.4 tsp of tomato paste
  • 1 TBSP dijon mustard
  • 1 small clove garlic, minced
  • 1 TBSP onion flakes
  • 1/2 tsp sea salt
  • 1/2 tsp dried dill
  • 1/2 tsp ground allspice
  • 1/2 tsp black pepper
  • 1 1/2 lbs free-range ground turkey
  • 2 TBSP grated Parmesan cheese
  • 2/3 cup chopped walnuts (optional)

Directions:

  1. Preheat oven to 375 F. Cover the bottom of a baking dish with coconut oil cooking spray
  2. In a large bowl, lightly beat the egg, tomato paste, mustard, garlic, salt, dill, allspice and pepper
  3. Stir in the turkey, Parmesan, onion flakes and walnuts until well mixed
  4. Make the mixture into a loaf and put it in the baking dish
  5. Bake for 45-50 minutes or until internal temperature reaches 165 F.
