Yield: 3 dozen crackers
Ingredients:
- 2 cups blanched almond flour
- 2 ½ Tbsp nutritional yeast
- 4 tsp coconut oil, melted
- 4 tsp cold water
- 4 tsp free-range egg whites
- ½ tsp baking soda
- ¼ tsp Himalayan sea salt
Directions:
- Preheat oven to 350°
- Place all ingredients in a bowl of a mixer. Mix for about 30 seconds until a loose dough forms.
- Form dough into a ball and roll it out between 2 sheets of parchment paper to about ¼” thickness.
- Remove top sheet of parchment paper. Use a pizza cutter to cut the dough into 1” squares. Save the leftovers to reroll for more crackers.
- Move the parchment paper to a baking sheet and separate the crackers. Space evenly. Use a small, round object to indent a circle in the centers.
- Bake for 10 mins, rotate the pan once, until golden around edges. Let cool completely before serving.
