4 oz. pasture raised organic boneless chicken breast 5 Brussels sprouts, halved or whole
1⁄2 cup mushrooms, sliced
5 cherry tomatoes
1⁄4 red onion, chopped
2 garlic cloves, minced
1 tbs extra virgin olive oil
1⁄4 tsp dried rosemary
1⁄4 tsp dried thyme
Optional ingredients: Salt and pepper
Heat oven to 400 degrees
On a baking sheet, place all vegetables (except garlic) and the chicken breast.
Drizzle with olive oil.
Spread 1⁄2 of the garlic over the chicken. Sprinkle the rest over the vegetables.
Sprinkle the dried spices over the whole sheet of veggies and chicken.
Cook in the oven for about 30 minutes or until the chicken reaches an internal temperature of 165 degrees.
