Coconut Flour Pie Crust

Ingredients:

2 Whole Eggs


1 TBSP Coconut Oil


1 TSP Vanilla extract


¼ TSP Himalayan Salt


1 CUP Coconut Flour


½ Cup Cold Grass Fed Butter (cubed)

Directions:


Preheat oven to 350F


Beat eggs oil and vanilla in a stand mixer until fluffy


In separate bowl mix remaining dry ingredients


Slowly pour the dry ingredients into the wet mixture while stand mixer is on low setting with a dough blade


Add chilled, cubed butter


Process by pulsing back and forth from off to low until it looks crumbly


Grease a cast iron pie pan with coconut oil and place mixture into the pan


Press into a dough shaped to match the pie pan. Once complete use a fork to poke holes into the bottom of the crust.


Bake for 10-15 min or until it just begins to turn golden brown
