Ingredients:
• 1/2 White Onion (Minced)
• 1 Clove Garlic (Minced)
• 1 Lemon
• 2 Cups Fresh Spinach
• 6-8 Eggs
Instructions:
- In a skillet saute onions and garlic in butter over medium heat.
- Once onions have started to soften, add spinach and allow to wilt.
- Squeeze lemon over spinach.
- Scramble eggs and pour over mixture.
- Cook till eggs are done then enjoy!
