Spicy Sweet Potato Wedges

This is a fantastic side dish or even just a snack. Sweet potatoes–despite being sweet–don’t spike your blood sugar nearly as much as a regular potato, and they’ve got more potassium than a banana. Always a great choice.

Ingredients

  • 2 lb. sweet potatoes, cut into wedges
  • 2 Tbsp olive oil or melted coconut oil
  • 1 Tbsp paprika
  • 1 tsp cayenne pepper
  • 3 tsp onion powder
  • 2 tsp sea salt
  • 1 tsp freshly ground pepper

Directions

  •  Preheat oven to 400 F
  • Place oil and all dry ingredients in a bowl and combine
  • Add in wedges and mix until coated thoroughly
  • Place on baking sheet and bake for 30 minutes or until crispy
  • Enjoy!
