Ingredients:
Dry ingredients:
- 1/2 cup Wedo banana flour
- 1 1/2 tsp gluten-free baking powder
- A pinch of Himalayan rock salt
Wet ingredients:
- 3 free-range eggs
- 1/2 cup water
- 1 tsp alcohol-free vanilla extract
- 1/2 TBSP apple cider vinegar
- 1 TBSP coconut oil (melted)
Topping:
- Dollop chilled full-fat coconut milk
Directions:
Preheat your waffle iron to level 4 or 5, depending on how dark you like your waffles.
Add wet ingredients to the mixing bowl with a winking blade and pulse on high for 30 seconds, or until ‘frothed’.
Switch to a wet blade and slowly add the banana flour, letting it run on low until a batter is formed.
Meanwhile, combine the additional dry ingredients and let the batter mix for an addition 30 seconds.
Finally add the oil while the blade is on the lowest setting to distribute the oil evenly.
Using a 1/4 cup measuring cup, pour the batter into the pre-heated waffle iron. Close and cook until done. Once complete, top with chilled coconut milk fat and enjoy!
