Here is a delicious cookie recipe that we use pretty regularly at the Ernst household. In fact, the included photo is a batch we made at home! It’s grain-free and has only a bit of sugar from the raw honey (that is made up for and then some) with the many benefits of raw honey. So please enjoy, because in most families, a recipe like this would be a closely-guarded secret.
Ingredients:
- 1/3 cup softened coconut oil
- 1/4 cup raw honey
- 2 egg yolks
- 2 Tbsp organic apple sauce
- 3/4 cup cassava flour
- 1/2 tsp sea salt
- 1/2 tsp baking powder
- 3/4 cup cocao nibs
Directions:
- Preheat the oven to 350 degrees Fahrenheit and grease a large cookie sheet with coconut oil.
- Cream together the coconut oil and honey in mixing bowl. Stir in the egg yolks and applesauce.
- Add the cassava flour, baking powder, and salt and mix well.
- Fold in the chocolate nibs.
- Drop by heaping tablespoonfuls onto the baking sheet and flatten out a bit.
- Bake for 20 minutes.
Yields 12-14 cookies.
