Instant Pot Beef & Beet Green Stew

  • 2 pounds of grass fed beef stew meat cut into 1 inches pieces
  • ¼ cup grapeseed oil
  • ½ cup beef tallow or butter
  • 1 large yellow onion chopped
  • 4 garlic clove minced
  • 2 bunches of beet greens chopped
  • 4 cups bone broth
  • salt and pepper to taste

In glass bowl massage grapeseed oil, garlic, and beef together. Let marinate 1-2 hours at room temperature or overnight. In instant pot sauté function, heat beef tallow.  Brown the meat on all sides for about 2 minutes. Remove from pot. Add onions and cook for 10 minutes.  Add bone broth and meat.  Cook on stew setting.  Add beet greens when completely done and let sit for about 10 minutes with lid on.
