Mocha Brownies

No one will notice (or care) that these delicious brownies are sugar free. It’s a perfect dessert, combining chocolate, visual presentation and the classic brownie tradition. They won’t disappoint.

Ingredients

  • 1⁄2 cup coconut our or almond our, sifted
  • 3 Tbsp. stevia powder
  • 1⁄2 cup butter
  • 1⁄2 cup brewed coffee
  • 3 Tbsp. unsweetened cocoa powder
  • 3 eggs
  • 1⁄2 cup unsweetened almond milk or coconut milk+ 2 tsp. apple cider
    vinegar, mixed together in a separate bowl (“buttermilk”)
  • 2 tsp. vanilla extract
  • 1 tsp. baking soda
  • 1 tsp. cinnamon
  • 1⁄2 tsp. sea salt
  • Coconut oil
  • Optional: walnuts

Directions

  • Preheat oven to 400 F and grease an 8×8 pan with coconut oil
  • In a large mixing bowl combine our, baking soda, cinnamon, salt
    and stevia. Set aside
  • In a medium size saucepan, combine butter, coffee and cocoa
    powder. Stir and heat to boiling
  • Pour boiling cocoa mixture over our mixture in bowl and
    combine
  • Add remaining ingredients and combine well with spoon or
    electric mixer
  • Pour batter into greased pan and bake for 20 minutes or until
    toothpick comes out of center clean.
  • Top with whipped cream or coconut cream, dust with cocoa
    powder and enjoy!
