Quinoa Breakfast Bowl

1/2 cup cooked quinoa
1/4 cup unsweetened almond milk (or any non-dairy milk of your choice)
1 tablespoon chia seeds
1/2 teaspoon pure vanilla extract
1 tablespoon unsweetened shredded coconut
Fresh berries (such as strawberries, blueberries, or raspberries)
Sliced almonds or chopped walnuts (optional)
Cinnamon (optional)


In a bowl, combine the cooked quinoa, almond milk, chia seeds, and vanilla extract. Stir well to combine all the ingredients.
Let the mixture sit for about 5 minutes to allow the chia seeds to thicken the mixture.
Once the mixture has thickened, stir in the shredded coconut.
Top the quinoa mixture with fresh berries and a sprinkle of sliced almonds or chopped walnuts if desired.
Add a dash of cinnamon on top for extra flavor, if desired.
You can also customize this recipe by adding other toppings such as sliced banana, diced apples, or a drizzle of pure maple syrup for natural sweetness if desired. Feel free to get creative and make it your own!
