INGREDIENTS:
12 oz Unsweetened Raspberries
1 Cup Xylitol
1/2 Cup Water
1 Cup Lemon Juice
1.5 TBSP Grated Lemon Peel
1 Liter Chilled Sparkling Water
Ice Cubes Lemon Slices & Mint Leaves
DIRECTIONS:
Combine frozen raspberries, xylitol and 1/2 cup water into a small saucepan and stir over medium heat until the xylitol dissolves and the berries thaw. Then bring to a boil for 3 min.
Strain the heated mixture with a sieve pressing all the juice out and leaving the seeds/pulp behind. Chill the strained syrup in the refrigerator.
Stir the raspberry syrup, lemon juice and sparking water in a large gallon glass container.
Add lemon peel and fresh raspberries if you wish.-Serve over ice, garnish with mint/lemon slice.
