INGREDIENTS:
- 1 lb beef sirloin, thinly sliced
- 1 head cauliflower, riced
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 medium carrot, chopped
- 2 cloves garlic, minced
- 3 tablespoons coconut aminos
- 1 tablespoon avocado oil
- Salt and pepper to taste
DIRECTIONS:
1. In a bowl, marinate beef with soy sauce for 10-15 minutes.
2. Heat avocado oil in a large skillet or wok over medium-high heat. Add the marinated beef to the skillet and cook until browned. Remove from the skillet and set aside.
3. In the same skillet, add the sliced bell peppers and carrots. Stir-fry for about 3-4 minutes until slightly tender. Add the cauliflower rice to the skillet and cook for an additional 3-4 minutes, stirring occasionally, until the rice is heated through and tender.
4. Add Beef into skillet and mix together to serve.
