Ingredients:
- 1 bunch or 12 ounces of spinach chopped
- 1 yellow onion chopped
- 1 cup green onion chopped
- 5 organic eggs
- 2 Tbsp coconut oil or butter
- Oregano, paresly and basil to taste
- 8 ounces raw cheddar cheese shredded
- ½ tsp salt
Directions:
Preheat oven to 350 degrees. In a medium skillet on medium heat, cook onions in butter or oil for 10 minutes. Add green onions. Cook for 5 more minutes. Remove from heat and cool. Wisk eggs. Wisk in eggs and seasoning and stir in onion mixture. Once well mixed pour into a pie plate coated with coconut oil. Bake at 350 degrees for 30 minutes.
